This month’s cooking demonstration at La Panetière will be on a day of your choice June 17 through 19 at 11:30 a.m. You’ll be taken through the steps of how to prepare a bi-colored, chilled gazpacho soup. The demonstration will be followed by a three-course luncheon with the soup served for the appetizer. La Panetière welcomes celebrity chef Tony Esnault June 17-20. Former Executive Chef for Alain Ducasse, Esnault garnered three stars from Michelin, the industry’s highest achievement, at one of only seven restaurants in the United States to have received this distinction.
Known for his signature elegant, contemporary French cuisine, Esnault has perfected the craft of preserving the integrity of ingredients in their preparation and pairing them harmoniously on the plate. His five-course prix-fixe dinner menu will offer an optional wine pairing to further enhance the unique culinary experience.
La Panetière proprietor Jacques Loupiac is excited to welcome his friend Chef Tony Esnault. “I have owned La Panetière for 24 years and it is so gratifying when I can offer my clients a once-in-a-lifetime experience in my restaurant.”
The five-course menu includes:
Sushi-grade Tuna Carpaccio
with contrast of asparagus, ginger, balsamic reduction;
Foie gras terrine “confit”,
white peach chutney/salad with basil leaves, toasted brioche;
Warm salad of rasor/Manilla clams, cuttlefish, periwinkles with pasta impression, shellfish jus; Roasted Long Island duck "en cocotte"
with potato beignet, glazed radish, sauce bigarrade; Raspberry/chocolat bar for contrast lovers
